Honey by Emil Hed


40 ml Talisker

10 ml Spriteriet Meadowsweet liqueur

25 ml lemon juice

 20 ml saffron honey

Club soda

Seaweed salt


Mix the ingredients (except the soda and the salt) in a shaker. Shake and strain over ice into a highball glass with a seaweed salt rim.

Saffron honey

 Mix equal parts honey and water to make honey water. Then add saffron. One sachet (0,5 g) is enough for 2 l of honey water.

Seaweed salt

Grab some seaweed (bladder wrack works just fine) and let it dry on a tray in the oven on a low temperature, or place it under the kitchen fan. When it’s dry, crush it into coarse pieces and mix with sea salt.
