Hallongrottor with tips from Annie Hesselstad

I haven´t done Hallongrottor since I was a small child and I wanted to make them as a surprise for my friend when we were going to HappieCamp. I looked up the recipe online but I thought I would ask a expert for some help, so I reached out to Annie Hesselstad (@anzeanze) on Instagram for some help.

And I got some tips that I implemented in this recipe.

Her tips were to add spelled flour and raw sugar to the mix and to get the cookies out after six minutes and then add the raspberry jam.

Ingredients
  

  • 4 dl Flour
  • 0,5 dl Spelled flour
  • 1 dl Sugar
  • 0,5 dl Raw sugar
  • 1 tbsp Baking powder
  • 3 tbsp Vanilla sugar
  • 200 g Butter
  • 200 g Raspberry jam

Instructions
 

  • Mix together flour, sugar, raw sugar, spelled flour, baking powder and vanilla sugar in a bowl. Cut butter into smaller pieces and add it. Work quickly together into a dough. Do not mix the dough too much, just so that it goes together.
  • Then make 12 balls the same size as you place in a muffin tin on a plate and put them in the oven at 200 degrees.
  • After 6 minutes, take them out of the oven and use a shot glass or other small glass to make a hole in them which you then fill with raspberry jam.
  • Then put them back in to the oven for 10 minutes before you take them out again. Let them rest for a while then they are ready to eat.
